Slow Cooker Mushroom and Lentil Soup – A Hearty Gluten-Free Meal

This easy slow cooker mushroom and lentil soup is the perfect make-ahead gluten-free meal prep. Just toss all the ingredients in the slow cooker in the morning and come home to a hearty, nourishing bowl of soup.
When I was in university I moved in with a friend. He assumed that I couldn’t cook so he was slightly alarmed when I went into the kitchen and started chopping. I think he was also a bit nervous that I would burn his house down. Imagine his surprise when he came home to the smell of this incredibly aromatic soup wafting from the kitchen. We sat down to test it out and he didn’t hesitate to polish off almost the entire pot.

Ingredients
½ Cup green lentils
½ Cup pearl barley (I have also used quinoa and wild rice for my gluten-free crowd)
1 pint chopped white or brown button mushrooms
3-4 stalks of celery, chopped
2 bay leaves
2 Tbsp dried summer savoury (this might be a Canadian thing, I’ve never seen it abroad- you can also use sage)
1 Tbsp dried thyme
6 cups vegetable stock

Method
- Throw everything in the slow cooker. Give it a little stir, close the lid and set to low/medium heat.
- Time will vary, depending on your slow cooker, you’ll know it’s done when the lentils are tender.
- Remove the bay leaves and serve with bread or crackers.

A: Yes, you can use 1/2 ounce of dried mushrooms instead of fresh. Soak them in hot water for 30 minutes before adding to the slow cooker.
