Rich and Zesty Green Salad Dressing

Enjoy the rich flavours of garlic, fresh herbs and nooch in this green-filled dressing that packs some nutritional punch!

Ingredients

  • 1/4 cup raw cashews
  • 1/2 cup boiling water
  • 1/4 cup nutritional yeast
  • 1 head roasted garlic
  • 1 handful fresh parsley or basil
  • 1 tsp salt
  • 1/4 cup olive oil
  • 2 handfuls baby spinach
  • 1 shallot (chopped)
  • juice from 1 lemon

Instructions

  1. Add boiling water to cashews and soak for at least 30 minutes.
  2. Add remaining ingredients and blend.
  3. Serve over your favourite salad, or alongside chopped veggies for dipping.
