This Banana Bread recipe was one of the first recipes that I made when I moved away to university. I was living in a different province, shopping and cooking for myself for the first time. And by cooking, I mean toast. So much toast. It wasn’t long before I wanted something real so I called home for some recipes. Among them was this Banana Bread recipe, and I’ve been making it ever since.

My living situation has changed a lot since then, I’ve lived with different people and have moved across the world. Whenever I make this Banana Bread it makes an instant impression. Friends remember and request it when they visit, even my landlady (who speaks no English) saves up her overripe bananas to give to me, since she knows I always say thank you with baked goods. We communicate solely through food exchange and I love that.

This recipe is easy to make, quick to prep and always tastes incredible. It’s perfect for brunches, desserts, or as a weekend treat. Next time your bananas get a little brown don’t waste them- bust out this recipe, make your food go farther and give into your sweet tooth. It’s so a-peel-ing (I had to).

Tips

Banana loaf is a moist, dense loaf. The batter holds a lot of moisture so the cooking time is longer than other desserts. To make sure your loaf is cooked all the way through, try the toothpick test- when it looks close, stick a toothpick into the thickest part. If the toothpick comes out clean, it’s done! If the toothpick is wet, it needs more time.

Save up your overripe bananas in the freezer. Anytime I have a banana that’s slightly past its prime, I throw it in the freezer, peel and all. Then, when I’m ready to get baking I take them out, let them thaw and you can squeeze them out of the peel easily- they mash much smoother this way too!

Mom’s Classic Banana Bread

Ingredients

3 overripe bananas, well mashed

4 tbsp melted butter

1 cup sugar

1 egg, well beaten

1 1/2 C. all purpose flour

1/2 tsp salt

1 tsp baking soda

1 cup (or more) chocolate chips

1 tbsp brown sugar

1 tsp cinnamon

Instructions

 

  1. Preheat oven to 180C/350F and prepare a greased loaf pan.

  2. Mix mashed bananas, melted butter, sugar and egg together.

  3. Sift in flour, salt, and baking soda and mix.

  4. Add chocolate chips and stir until just mixed.

  5. Mix brown sugar and cinnamon in a separate small bowl.

  6. Pour batter into loaf pan and sprinkle cinnamon sugar over the top.

  7. Bake for 50-60 minutes, until cooked all the way through.

  8. Allow loaf to cool before slicing and enjoy with a cup of coffee or tea!
