Irresistibly Fresh Greek Dip

Ingredients

  • 2 cups cucumber (chopped into small pieces)
  • 2 cups cherry or roma tomatoes (chopped into small pieces)
  • 1/4 cup olive oil
  • 1 tbsp dried basil (or an other mixed herb you prefer)
  • 1 cup vegan feta
  • salt (to taste)
  • tortilla, flatbread or crackers (to serve)

Instructions

  1. Toss the vegetables in a large dish or bowl.
  2. Add herbs and salt to olive oil and mix to make a dressing.
  3. Drizzle over vegetables and mix.
  4. Top with crumbled feta.
  5. Serve chilled with tortillas, flatbread or crackers.
