Ingredients
- 2 cups cucumber (chopped into small pieces)
- 2 cups cherry or roma tomatoes (chopped into small pieces)
- 1/4 cup olive oil
- 1 tbsp dried basil (or an other mixed herb you prefer)
- 1 cup vegan feta
- salt (to taste)
- tortilla, flatbread or crackers (to serve)
Instructions
- Toss the vegetables in a large dish or bowl.
- Add herbs and salt to olive oil and mix to make a dressing.
- Drizzle over vegetables and mix.
- Top with crumbled feta.

Q: I really don’t like tomatoes, can I use anything else?
A: I recommend trying the tomatoes, making sure to use a sweeter variety like Roma or cherry tomatoes, and just adjust the quantities. If that doesn’t work for you, I’ve also added bell peppers, olives and red onions to this so you could replace the tomatoes with those!
