There’s something undeniably comforting about the aroma of freshly baked cookies wafting through the kitchen. And when it comes to ginger cookies, the combination of warm spices and sweet flavours creates an irresistible treat that is loved by all.

This recipe is one of my most requested by friends and family. I always associate these flavours with the holidays, but they’re so good it doesn’t matter! I get asked to make these year round! Whether you’re looking for a holiday favourite or simply want to satisfy your sweet tooth, these homemade ginger cookies are sure to impress.

The combination of ginger, cinnamon, and cloves gives these cookies their distinct spiciness and aroma. Ginger adds a zingy and slightly peppery flavour, while cinnamon provides a sweet and warm note. The ground cloves contribute a hint of earthiness and depth to the overall flavour profile.

One of the key ingredients in this recipe is molasses. It adds a rich and caramel-like flavor to the cookies, enhancing their sweetness and providing a subtle depth of flavor. The molasses also contributes to the cookies’ soft and chewy texture, making them even more delightful to bite into.

Tips

Be sure to allow some time for the dough to chill in the refrigerator before baking. The chilled dough is easier to handle and helps the cookies maintain their shape during baking.

Store the cookies in an airtight container to maintain their freshness for several days. Enjoy them with a cup of tea anytime.

The dough can be frozen for up to 3 months. Wrap it in plastic wrap and put into a freezer bag, and instead of refrigerating the dough, pop it into the freezer to bake later.

Irresistible Homemade Ginger Cookies

Ingredients

2 1/4 cups all-purpose flour

2 tsp ginger

1 tsp cinnamon

1/2 tsp ground cloves

1 tsp baking soda

1/4 tsp salt

3/4 cup butter

1 cup white sugar

1 egg

1 tbsp water

1/4 cup molasses

Extra sugar for rolling

Instructions

1. Cream the butter and sugar: Using a mixer, cream together the butter and sugar until light and fluffy.

2. Add the molasses: Pour in the molasses and continue mixing until well combined.

3. Incorporate the egg: Add the egg to the mixture and mix well until thoroughly incorporated.

4. Sift and add dry ingredients: In a separate bowl, sift together the flour, ginger, cinnamon, cloves, baking soda, and salt. Slowly add the dry ingredients to the creamed mixture, stirring slowly until a well-mixed dough forms.

5. Refrigerate the dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour, allowing the flavours to develop and the dough to firm up.

6. Preheat the oven: Preheat your oven to 180C/350F.

7. Shape and roll the dough: Roll the chilled dough into 1-inch balls. Then, roll each ball in white sugar for a touch of sweetness and a beautiful appearance.

8. Bake to perfection: Place the sugar-coated dough balls on a lined baking sheet and bake for 8-12 minutes, or until you start to see that distinct “crackle” across the top of the cookies.

9. Cool and enjoy: Once baked, transfer the cookies to a cooling rack and allow them to cool completely.
