Soy lecithin is a versatile ingredient that performs culinary wonders. Derived from soybeans, it possesses unique properties that make it invaluable in the kitchen. One of its remarkable abilities is its emulsifying power, which allows it to bring together oil and water-based ingredients seamlessly. If you don’t have any, you can still make vegan butter but it will separate more and require stirring before each use (kind of like a lot of natural nut butters).

The only special equipment you need for this is a good blender. I recommend a hand blender like mine because it is way easier to clean than a jug blender!

Homemade Vegan Butter: A Creamy and Dairy-Free Delight

Ingredients

2/3 cup unsweetened oat milk

3/4 cup plus 1 tbsp refined coconut oil

1 tbsp white miso

2 tbsp lecithin granules

1 tbsp lemon juice

Instructions

 

  1. In a bowl, combine the oat milk and lemon juice. Allow it to stand for about 5 minutes, allowing the milk to curdle.

  2. In a blending jar, combine the refined coconut oil, white miso, salt, and lecithin granules.

  3. Add the curdled oat milk to the blending jar and use a hand blender to blend the ingredients until they are well emulsified. The mixture may appear chunky at this stage.

  4. Pour the emulsified mixture into a sealable container and place it in the refrigerator to set. This process usually takes about an hour.

  5. Once the vegan butter has set, you may notice some excess liquid that has separated. Simply pour it off and proceed to smooth the butter into a mould or leave it as is.

  6. Your homemade vegan butter is now ready to use! Store it in the refrigerator and use it within a week. If you prefer, you can also freeze it for up to three months.
