Apple Crisp: An Atlantic Canadian Classic

This is a recipe from my childhood, and it’s an absolute must-make for all the cold weather holidays. I always make sure to save room after Thanksgiving or Christmas dinner for a huge bowl of apple crisp (with ice cream). Served hot, it gets that melty ice cream puddle, served cold, still amazing. You really can’t go wrong with this one. The soft, tender apples under the sweet, crunchy crumble is unbeatable.
Apples and cinnamon is one of the best flavour combos. Even living away from home I make this and my entire house smells like the holidays. Apples are one of my favourite fruits and sadly, it is impossible to find good apples in Asia. They’re nothing like the apples fresh off the tree in Canada. The apples I get here I would consider ‘baking apples’. So anytime I get a craving for apples, I get baking! Apple cake, apple muffins, apple sauce and of course, apple crisp!
This recipe can easily be vegan, just use a plant-based fat like vegan butter, vegetable shortening or solid coconut oil.
Tips
This recipe is very easy, a tip I’ll offer is to make sure your butter (or coconut oil/vegetable shortening) is very cold- this will help to make your topping a crumble rather than a mush.
Similarly, go for steel cut oats rather than instant oats- they’ll add more texture to your crumble and hold together better.
A pastry blender works best to mix the butter and dry ingredients, but you can also use a fork. I don’t recommend mixing with your hands because the heat will melt the butter- the key is for the butter to remain cold.

Ingredients
8-10 apples, peeled and sliced
1/2 Cup vegan butter
1 Cup rolled oats
1 Cup all-purpose flour
1 Cup brown sugar
1 Tbsp cinnamon
Juice from one lemon
1/2 Cup raisins (optional)
Instructions

Preheat oven to 180C/350F.

Place chopped apples (and raisins) in a greased, oven safe dish.

Drizzle lemon juice over the apples and toss.

In a separate bowl cut the dry ingredients into the butter. Don’t overmix, it should form a loose crumble.

Spread the crumble over top of the apples and bake for 30-50 minutes (until the apples are tender).

Let cool slightly and serve warm (with ice cream!)

Q: Is this recipe gluten-free?
A: This can easily be made gluten-free! Swap the all purpose flour for Bob’s 1 to 1, and make sure your oats are certified gluten-free.
