Fabulously Fresh Lemon Cookies

These lemon cookies will make you very popular at any party. Seriously. They’re so simple, yet unexpectedly delicious. Fresh flavours, not too sweet, perfectly chewy. You’ll have requests for these ones everywhere you go.

I traveled home to Canada last summer for the first time in about six years. It was a long time coming, I hadn’t seen family and friends in far too long. I wanted to see everyone and do as much as I could. Lot of pressure for a two week holiday. I also didn’t want to impose, since I was staying with family. I figured I could lessen some of the ‘house guest burden’ by being an excellent guest, and cooking for everyone. I got to introduce my family to lots of new foods and recipes I’ve come to love. 

My Dad has a big sweet tooth (not surprising that I do too). I wanted to bake some cookies, but something more ‘summery’ than a classic chocolate chip, to get Mom on board too. I love everything lemon-y. Lemon squares, lemon sorbet, lemon pie. Why not lemon cookies? Such fresh flavours, such a simple treat.

Over the next couple weeks I ended up making about 12 dozen lemon cookies, basically anytime we had company or went on a visit these were a must-have. What was amazing about this trip was that I got to meet family members for the first time, there’s a whole new generation since I was last home. Bringing these with me definitely helped me to start of strong with the new kids in my family. This is one of the recipes I get asked for the most, so it would be cruel to keep it all to myself. They’re also very easily adaptable to be made vegan as well- check out that recipe too!

Fabulously Fresh Lemon Cookies

Ingredients

1 cup unsalted butter, room temperature

1 1/2 cups granulated sugar

3 tbsp lemon zest

2 tbsp fresh lemon juice

1 large egg

3 cups all purpose flour

1 tsp baking soda

1/4 tsp salt

1/4 cup sugar, for rolling cookies

1 cup white chocolate chips

Instructions

 

  1. In a mixing bowl, beat the butter, sugar, and lemon zest with an electric mixer for 1-2 minutes.

  2. Add in the lemon juice and egg, beat again to combine.

  3. Gradually add in the flour, baking soda and salt, mixing by hand with a spatula until combined.

  4. Add white chocolate chips and fold in until just mixed.

  5. Cover the bowl with plastic wrap and refrigerate for 30-60 minutes.

  6. Remove the dough from the fridge. Preheat the oven to 350ºF. Place 1/4 cup sugar in a bowl for rolling the cookies.

  7. Use a cookie scoop to form balls, rolling each ball into the sugar. Place the cookies 2 inches apart on a silicone lined baking sheet. Bake for 11-13 minutes or until the edges have a faint golden color.

  8. Allow the cookies to cool on the baking sheet for 5 minutes, then move to a cooling rack to cool completely.
