Garlic Fingers: Secrets from Eastern Canada

Garlic Fingers are one of the best kept secrets of Atlantic Canada. I’m sure there are similarities elsewhere, but no one seems to know what I’m talking about outside of the East Coast. Living abroad, this is one of the things I always look forward to when heading home for a visit. During the pandemic, unlike all my sourdough friends, I set my sights on the perfect pizza dough. Once I’d made progress and developed a recipe that I liked, the next logical step was to make it into Garlic Fingers.
Garlic Fingers are usually served alongside your pizza, they can sort of be an appetizer to your main pizza. Or, if you’re like me, they can be the showcase. They couldn’t be more simple to make, there’s not much variation and there are only a few ingredients. They use a regular pizza crust, have a garlic butter/oil brushed across the dough, and are topped with mozzarella and dried parsley and basil.
They’re baked in the same way as a pizza. For mine, I use my pizza paddle to slide the whole thing onto a preheated, very hot baking pan. When the cheese is bubbly and the crust is browned, pull them out. Now, one thing you must know: they’re not cut in the same way as pizza. There’s no triangle Garlic Fingers (they’re called “fingers” for a reason). One long cut down the middle, and several perpendicular cuts does the trick for me.
Also, back home they’d traditionally be served with donair sauce. If you know what it is, I’m sorry. If you don’t know what it is, I’m not explaining because I don’t want to know what’s in it.

Ingredients
2 tbsp butter/vegan butter/olive oil
1 tbsp minced garlic
1 tsp salt
mozzarella/vegan mozzarella for topping (as much or as little as you like)
Sprinkling of dried basil and parsley
Instructions
1. Preheat the oven to 220C/425F with a large baking pan or pizza stone inside.
2. Lay down a large square of parchment paper and sprinkle with semolina or flour.
3. Form the dough into a thing crust (roughly a circle, do what you can)
4. Mix butter/oil with garlic and salt. Spread over the surface of the dough with a pastry brush or the back of a spoon.
5. Top with cheese and dried herbs.
6. Use a pizza paddle to slide everything (parchment and all) into the oven on top of the preheated pan or stone.
7. Bake for about 10 minutes, or until the cheese is bubbling and the crust has started to brown.
8. Remove from the oven, slice into fingers (see above) and enjoy!
