This dressing makes about 2 cups of dressing. I prefer to use my immersion handheld blender in a large cup to make this dressing (instead of a jug blender) to make sure I get every last drop!

Ingredients
- 1/4 cup raw cashews
- 1/2 cup boiling water
- 1/4 cup nutritional yeast
- 1 head roasted garlic
- 1 handful fresh parsley or basil
- 1 tsp salt
- 1/4 cup olive oil
- 2 handfuls baby spinach
- 1 shallot (chopped)
- juice from 1 lemon
Instructions
- Add boiling water to cashews and soak for at least 30 minutes.
- Add remaining ingredients and blend.
