Classic Chocolate Chip Cookies

There’s something undeniably comforting about the aroma of freshly baked chocolate chip cookies wafting through the kitchen. It brings back memories of childhood, cozy moments with loved ones, and the simple joy of indulging in a sweet treat. Whether you’re an experienced baker or just starting your culinary journey, our classic chocolate chip cookie recipe is a must-try.
This recipe is near and dear to my heart, it’s one of the first recipes I “stole” from my Mom. I would BEG for these cookies as often as she’d agree. They’re the perfect texture- chewy with a little crisp around the edges, not too sweet, and loaded with as many chocolate chips as you can handle. Gather your ingredients and have these sweet treats in no time!

Ingredients
- 3/4 cup vegetable shortening (room temperature)
- 1 1/4 cup brown sugar
- 1 large egg (room temperature)
- 2 Tbsp oat milk (I use oat milk, but any milk will work)
- 1 Tbsp vanilla
- 1 1/2 cup all-purpose flour
- 1 tsp salt
- 3/4 tsp baking soda
- 1 to 1 1/2 cups of semi-sweet or milk chocolate chips (depending on your preference)
Instructions
- Cream vegetable shortening and sugar together until smooth. I use my stand mixer, but you can do it by hand as well.
- Add in egg, milk and vanilla, mixing well after each addition.
- Sift in remaining dry ingredients, mix.
- Add chocolate chips and mix.
- Put the dough in the fridge for at least 1 hour. Having cold dough will prevent burning and overspreading (plus it just makes it easier to scoop).
- Preheat oven to 175C/350F
- Spoon out blobs that are roughly 1” (no need to roll, don’t press) onto a parchment lined baking sheet. Leave space for cookies to spread.
- Bake for 8-10 minutes, until cookies are golden brown and solid in the centre (but before they crisp).
Notes
Once your cookies are baked to perfection, transfer them to a wire rack to cool completely. This step allows the cookies to firm up while keeping a tender, chewy centre.

- A: Of course! The easiest way is to just directly substitute a gluten free all purpose flour. I like Bob’s Red Mill 1 to 1.
