Creamy Dill Dressing

This creamy dill dressing started as a simple salad topper but has since become a pantry staple in our home. With bright flavors from fresh dill, tangy lemon juice and creamy avocado, it adds vibrant flavor to any meal. My current favorite way to enjoy it is as a dip for roasted sweet potato fries – the creamy herbaceousness of the dressing pairs perfectly with the warm, lightly charred fries for a more indulgent snack.
The dressing comes together in just a few minutes using ingredients you likely already have on hand. Fresh dill is key for maximum herbal flavor but the dressing also stores well so you can make a big batch to have on hand. Feel free to adjust the herb amount to your personal tastes – I like a dressing with bold dill flavour but you can reduce the amount if you prefer something more subtly herbaceous.

Ingredients
- A bunch of fresh dill (a large handful- more if you love dill)
- 1/2 avocado
- 1 Tbsp dijon mustard
- 1 Tbsp honey
- 2 Tbsp white vinegar
- 1/3 cup water
- Juice of one lemon
- 1/2 tsp salt (to taste)
Instructions
1. Put everything into a large cup and blend with an immersion blender until smooth. I recommend using an immersion blender for this recipe so you get every last drop.
2. Serve on any of your favourite salads (or with your sweet potato fries).
3. Store in the fridge, in a sealed jar for up to a week.

Q: Can I use dried dill instead of fresh?
A: You can use 1-2 tsp dried dill in place of the fresh bunch but the flavor won’t be as bright. Try to use fresh dill if possible.

A: Yes, the creamy dill dressing will keep in an airtight jar in the fridge for up to 1 week. The flavors will deepen over time.
